Following are various rice recipes that are enjoyed by many everyday. Rice recipes if I am permitted to say cannot be left out of the meals that would be enjoyed by the average man every single day. Rice can be turned around to so many dishes of various kinds.

ASSORTED GHANAIAN JOLLOF RICE
Ingredients
· Long grain rice
· Fresh tomatoes
· Pepper
· Cloves of garlic
· Onions
· Bay leaves
· Thyme
· Vegetable oil
· Sausages, chopped
· Beef
· Carrots
· Green pepper
· Spices
· Panko bread crumbs
· Flour
· Eggs
Approach
Meat
· cut the beef into perfect sizes and wash right into a saucepan.
· Add the blended onion, garlic and ginger.
· add salt, seasoning and small water and allow to steam for 10- 15 minutes till tender.
· Heat oil in a huge saucepan. Allow meat to cool and fry till golden brown and put it into a bowl.
Sausages
· wash sausages and chop into small sizes.
· marinade sausages in combined spices ( onion, garlic and chili) for 4 minutes and fry until golden brown.
Shrimps
· use paper towels to pat the shrimp dry.
· toss the shrimp with salt, black pepper and garlic powder.
· pour a few quantity of flour in a bowl. Beat eggs in some other bowl and bread crumbs in some other.
· dip every shrimp in flour, eggs and then bread crumbs. Use your hand to press the bread crumbs onto each piece of shrimp.
· Heat oil under medium heat and deep fry shrimps in batches until golden brown.
· transfer them to a paper towel covered plate.
Rice
· Put chopped onion and garlic in a pan on fire and allow to simmer
· Add combined pepper, sparkling tomatoes and tomatoes puree. Stir and cover to cook for a while.
· Add salt to taste
· Put curry, nutmeg and rosemary and continue to cook the stew until well cooked.
· Put cups of rice to and then stir continuously for 2 minutes.
· Put water, salt again if need be and cover to cook for about 10mins.
· After 10-15 mins add the fried meat, sausages, Green pepper, shrimps, carrots and allow to simmer for a few more minutes until cooked and tender.
· Serve assorted jollof
FRIED RICE
Ingredients
400g Rice
100g Green beans
2 Teaspoon soy sauce
2 medium sized carrots
Salt to taste
2 tablespoon cooking oil
2 eggs
2 Green pepper
1/2 Teaspoonful Adobo
2 Spring Onions
1 Shrimp cube
Preparation
1. Cook rice and dry it
2. Wash and peel vegetables, cut carrots, green pepper and beans into cubes
3. Separate the white and green parts of the onions and cut into small parts
4. Heat oil and add white spring onions, stir for 30-40 seconds
5. Beat the egg and salt and pour into the pan and then cook for some few minutes until it sets, stirring all the time.
6. Add other vegetables and stir fry for a few seconds.
7. Add rice and stir
8. Mix in the Soy sauce and season to taste.
9. Add the green spring onion and serve with fried chicken. (Portions - 4)
SAFFRON RICE
Ingredients
250g Rice
50g Onions (chopped)
1/2 Teaspoonful Yellow colour (saffron colour)
100g Green peas
Preparation
1. Cook onion in the oil
2. Add rice and stir fry
3. Add the yellow colour, water and salt to taste.
4. Cover it and allow to cook.
5. When cooked, mix in the green peas and serve. (Portions - 4)
SPAGHETTI FRIED RICE/RICE ARONY/VERMICELLI RICE/RICE RASTA
Ingredients
200g Rice
2 Tablespoonful cooking oil
100g vermicelli/spaghetti
1 Large Onion
Seasoning
Preparation
1. Fry the vermicelli/spaghetti in hot oil till brown
2. Add chopped onions
3. Add water and salt
4. Add washed rice, seasoning and allow to cook.
5. Serve ( Portions - 4)
CURRY RICE
Ingredients
200g Rice
2 Tablespoonful cooking oil
1/2 Teaspoon curry powder
50g Onion (Chopped)
100g mixed fruits
1 Tablespoon salt.
Preparation
1. Cook onion in the oil
2. Add rice and curry powder, stir fry for some time
3. Add water and salt and allow to cook.
4. When cooked, garnish with mixed fruit and serve. (Portions - 4)
PLAIN RICE
Ingredients
200g Rice
Salt to taste lightly
Water (2 times quantity of rice)
Preparation
1. Put water on fire to boil, add salt
2. Put rice in the boiling water and stir a little
3. Allow to boil for some time, reduce heat and cook till water is absorbed.
4. Leave it on the fire until well cooked and serve with stew. (Portions - 4)
SAVORY RICE
Ingredients
200g Rice
1 Teaspoonful puree
1/2 Teaspoonful Cayenne pepper
500ml white stock
50g Onion
250ml cooking oil
Preparation
1. Cook the onion in the oil
2. Add the puree and cayenne and cook for some few minutes
3. Add the rice, braise, then add the stock and leave to simmer.
4. Cover the rice and leave to cook
5. Garnish with green pepper and serve.
