Flour recipes like the Pizza's, meat pie and pancake are foods that are enjoyed everyday by many the world over. On this page we will be looking at how to prepare those foods. Please read through and prepare yours at home, below are the various recipes for various Flour dishes:
PIZZA
Ingredients
100g flour
12g margarine
125g water/milk
100g onions
60ml sunflower oil
100g tomato puree
3g basil
2 cloves of garlic (Crushed)
5g Yeast
5g Caster Sugar
10g Sugar
200g plum tomatoes
10g Corn flour
100g mozzarella cheese
A pinch of salt.
Preparation
1. Sieve the flour and salt.
2. Rub in margarine
3. Disperse the yeast in the warm milk or water, add caster sugar and then add this mixture to the sieved flour.
4. Mix well, knead to a smooth dough, place it on a basin covered with a damp cloth and allow it to prove until double in size.
5. Knock back, divide into two and roll out into two 18cm and place it on a lightly greased baking sheet.
6. Put oil on fire. Add the roughly chopped tomatoes, tomato puree, oregano, basil and sugar. Bring to a boil and simmer for 5 minutes.
7. Dilute the corn flour in a little water, stir into tomato mixture and bring back to boil.
8. Take the disc of pizza dough and spread approximately 125g of filling on each one .
9. Sprinkle it with grated mozzarella, cheese and bake for 20 minutes.
10. Serve hot or cold. ( Portion - 4).
PANCAKE WITH JAM
Ingredients
100g flour (White or whole meal)
1 Egg
Oil for frying
Pinch of Salt
10g Margarine
1/2 pt milk
50g Sugar
Jam for spreading
Preparation
1. Sieve the flour and salt together into a bowl, make a hole in the centre.
2. Add the egg and milk gradually, incorporating the flour from the sides, whisk to a smooth batter.
3. Mix in the melted butter/Margarine
4. Heat the pancake pan, clean thoroughly.
5. Add a little oil, heat until smoking.
6. Add enough mixture just to cover the buttom of the pan thinly.
7. Cook for a few seconds until brown.
8. Turn and cook the other side and turn onto a plate.
9. Sprinkle with sugar, spread with jam. Fold in half then half again.
10. Serve hot (Portions - 4)
LEMON PANCAKE
Ingredients
100g flour
250ml (1/2 pt) Milk and water
50g Sugar
A pinch of salt
1 lemon
1 nutmeg
1 egg
10g margarine
Preparation
1. Sieve the flour and the nutmeg.
2. Make a hole in the centre of the flour
3. Dilute the milk with water and add a pinch of salt and 50g of sugar.
4. Break the egg and add to the milk solution.
5. Add the egg in milk solution gradually .
6. Whisk to a smooth batter.
7. Melt the margarine and add the melted margarine to the mixture.
8. Fry in a shallow frying pan.
9. Serve hot, garnished with slices or quarters of lemon.
MEAT TURNOVER (MEAT PIE)
Ingredients
200g soft Flour
100g minced meat/corned beef
100g margarine or butter
2-3 tablespoonful of water.
1 medium sized onion.
A pinch of salt
4 Teaspoon of Pepper.
1 medium sized green pepper.
Preparation
1. Sieve all dry ingrdients
2. Rub margarine into flour together with salt.
3. Add water
4. Roll and cut. Fill in seasoned chopped onions and corned beef.
5. Brush the edges with water, fold over and brush with eggs.
6. Bake in the oven for about 40 minutes.
*Serve. (Portions - 10)
FRIED CHIPS
Ingredients
200g flour (soft)
100g Margarine
500ml cooking oil
Cold water
1 medium onion, ground
A pinch of salt
Preparation
1. Rub margarine into flour together with salt to a sandy texture.
2. Add blended onion and water to form a dough.
3. Roll, cut into neat pieces and deep fry.
4. Serve (Portions - 10)
BAKED CHIPS
Ingredients
200g flour (Soft)
150g Margarine
1 level teaspoonful onion ground
A pinch salt
2-3 tablespoonful whater
1 tablespoonful white pepper
Preparation
1. Rub margarine into flour together with salt and white pepper
2. Add water with ground onion.
3. Roll, cut and bake.
4. Serve hot or cold.
ROCK BURNS
Ingredients
100g Flour
50g Margarine
50g Sugar
1 level teaspoon baking powder
1 small egg
Flavouring
3 Tablespoon diluted milk.
Preparation
1. Weigh/measure ingredients, grease baking tray.
2. Sieve together all powdered or flour ingredients.
3. Add sugar. Rub in fat using fingertips.
4. Pre-heat oven.
5. Beat egg and mix with milk and flavouring.
6. Add liquid and mix with palette knife
7. With spoon and a fork, divide the dough into rocky cones on a greased baking tray.
8. Bake on a top shelf Reg. 5-6/375F*/190* for 15 to 20 minutes.
9. Remove, cool and Serve.
FRIED DOUGHNUTS
Ingredients
400g flour
125g margarine
1 bottle cooking oil
75g sugar
1/4 tin of milk
A pinch of salt
2 Teaspoons baking powder
1 egg
1 nutmeg
2 drops essence
Enough water to get a soft dough
Preparation
1. Add all dry ingredients to sieved flour
2. Rub in margarine
3. Mix milk, water, beaten egg and essence and add to flour to form a soft dough
4. Deep fry in hot oil in small quantities.
5. Remove and serve (Portion - 10)
SHORT BREAD BISCUIT
Ingredients
150g flour
A pinch of salt
100g margarine
A pinch of nutmeg
50g Sugar
Preparation
1. Sieve the flour and salt
2. Rub the margarine into the flour and add sugar
3. Combine all the ingredients to a smooth paste
4. Roll carefully on a floured table or board to the shape of a rectangle or round, 1/2cm, (1/4 inch) thick.
5. Place it on a lightly greased baking sheet.
6. Mark into the desired sizes and shapes. Pick with a fork.
7. Bake in a moderate oven at 180 - 200*C (Reg. 4-6, 350 400*F) for 15-20 minutes.
AYIGBE BISCUITS
Ingredients
1/2 Olonka dry starch (Powdered)
6 egg yolks
Flavouring
Nutmeg
Sugar and salt to taste
Coconut Juice( About 5 medium sized dry coconuts grated and squeezed)
Preparation
1. Grate the coconuts
2. Add a little water to it and squeeze the juice out of it
3. Add the sugar, salt, nutmeg and flavour to the egg yolk and mix thoroughly
4. Add the starch powder and mix well till you obtain a dough
5. Mould into desirable shapes and sizes and bake.
BREAD
Ingredients
4 Cups of flour(480g)
1 teaspoonful dry yeast (10g)
1 Cup liquid (Water or milk - 250g)
2 tablespoonful sugar (28g)
1 teaspoonful fat (15g)
2 tablespoonful salt
1 Nutmeg (grated)
Preparation
1. Soak active dry yeast in 2 tablespoons of lukewarm water. Add 1/2 teaspoon of sugar and set aside to grow yeast.
2. Heat the liquid (water), add the remaining sugar, fat and salt, stir until the fat melts.
3. Cool to lukewarm and add the yeast mixture.
4. Add half the flour and beat until smooth, continue adding flour until not too sticky. Let the dough stand for 5-10 minutes.
5. Sprinkle some flour onto a smooth surface, coat the dough with flour then knead well until the dough is smooth and elastic.
6. Place the dough in a greased bowl, cover with a cloth and allow to rise (Proof) in a warm place until double in size (note that imprints of fingers remain on dough)
7. Punch down the dough gently to distribute the gas, shape as desired and put into a greased loaf pan.
8. Cover it with a damp cloth to keep the surface from drying. Let it rise in a warm place until double in size.
9. Prepare oven 200 degrees Celsius (400 degrees Fahrenheit) and bake.
10. Bread is done (ready) when well browned, comes out easily out of pan and gives a hollow sound when tapped at the base.
VICTORIA SANDWICH
Ingredients
100g butter or margarine
2 eggs
100g flour
1/2 level teaspoons baking powder
100g castor sugar
Preparation
1.Cream the fat and sugar until fluffy.
2.Gradually add the beaten egg.
3.Lightly fold in sieved flour and baking powder.
4.Divided into 18cm (7inch) greased sponge tins.
5.Baked in hot oven for 12-15 minutes.
6.Turn out on to a wire rack to cool.
7.Spread one half with jam,place the other half on top.
8.Dust with icing sugar.
CREAMED CAKE
Ingredient
1.400g flour
2.400g margarine
3.200g sugar
4.10 eggs
5.Nutmeg
6.Flavour
7.2 1/4 teaspoon baking powder
Preparation
1.cream sugar and margarine until smooth and fluffy.
2.Add beaten eggs gradually.
3.Mix in baking powder.nutmeg and flour.
4.Add to the mixture,flavour,pour in greased cakes tins and bake in the oven.
FRUIT CAKE
Ingredients
1.400g flour
2.400g margarine
3.200g sugar
4.10 eggs
5.nutmeg
6.flavour
7.2/1 teaspoon baking powder
1 packet mixed fruit.
Preparation
Use the method in the creamed cake above and add the fruits.
